The History of FujiSan

Observation and Innovation

Our story began in the late 1990’s with a small team rolling fresh sushi in a local retail grocery store in San Diego, CA. The program was slowly growing but we noticed that customers were hesitant to try raw options, gravitating mostly to the fully cooked California Rolls or veggie options. Seeing this as an opportunity, our R&D team developed a process to extend the shelf-life of sushi rice and we pivoted our focus to mass producing a variety of California Rolls, side dishes, appetizers and salads for grocery stores, club retailers, and convenience stores across the nation.

Exploration and Growth

In 2010, we observed that fresh sushi was gaining in popularity and sushi bars were beginning to open across the U.S. in areas that had never had fresh sushi before. Consumers’ palates were maturing and the desire for fresh, handcrafted sushi was growing. To support the expansion of Fresh Sushi, we returned to rolling in retail grocery stores under the FujiSan brand. Today, you will find our FujiSan chefs handcrafting fresh sushi across the nation in retail grocery stores, club locations, universities, hospitals and corporate dining locations.
