What is Sustainable Seafood?
Sustainable seafood is sourced from responsibly managed fisheries that maintain healthy populations without harming the environment.
Sustainable practices include:
Only fishing in populations that are “healthy and abundant”
“Minimizing bycatch,” which means mitigating the impact on other populations (think “dolphin-safe tuna”)
Not endangering species that are already threatened
Managing the long-term productivity of all impacted species

Sustainability Spotlight
Wild-Caught Alaskan Pollock
One fish we love to highlight is our surimi—or imitation crab—which is made from wild-caught Alaskan Pollock. This fish is found in the cold and clear waters around Alaska and is considered Alaska’s most abundant fish. Known for its mild taste and white, flaky texture, it makes for an excellent base for many of our sushi rolls, such as our California Roll, Dragon Roll, and more. In Alaska, seafood is responsibly managed utilizing world-leading, science-based strategies to support healthy fish stocks, communities, and entire ecosystems. Moreso, Alaska is the only state with sustainable fishing written directly into the state’s Constitution.
